Balsamic Onion Spread


This spread can be prepared in 2 ways. Either combine all ingredients and and roast on a parchment covered baking tray for 30 minutes at 350° F in your oven, or prepare in an extra large skillet on your stove top, as outlined below, as your cooking method. Makes approximately 3 cups of balsamic onion spread.

 

1/4 cup olive oil
3 Spanish onions, peeled and sliced 1/2-inch thick
6 garlic cloves, thinly sliced
3 tablespoons balsamic vinegar
2 tablespoons honey
2 1/2 teaspoons salt
2 teaspoon red pepper flakes
1 tsp dried tarragon, or oregano, or basil chopped
up to 2 tsp prepared hot sauce if desired

 

Pour the olive oil into a large skillet and place over medium high heat. Add the onions and garlic and cook, stirring to coat in oil. The onions should be a rich caramel colour before reducing the heat to medium, adding the balsamic, sugar, salt, your choice of herb and red pepper flakes and hot sauce Cook for 15 to 20 minutes, until the onions are soft, and liquid is reduced. Remove from the heat and let cool. Transfer to a food processor and pulse until chunky. Remove from machine bowl, place in serving bowl.

This spread is best served at room temperature. Enjoy with your favorite Skinny Dippers!
