Feta Dip


Feta cheese is a great match for our Skinny Dippers crackers! This is best made in a food processor. It makes about 3 cups of dip. This dip may be made 2 to 3 hours ahead of time and kept, covered, in the refrigerator.

 

3 cups (about 12 ounces) crumbled feta
8 large fresh basil leaves washed
2 tsp dried red pepper flakes
1 heaping tablespoon cracked black peppercorns
2/3 cup extra-virgin olive oil
¼ c fresh lemon juice
1 garlic clove peeled (if desired)
1 package of Pita Break pitas cut into triangles

 

In a food processor pulse together the feta, basil, and peppercorns until combined. Add the olive oil and lemon juice, alternating between each and pulsing after each addition, until the mixture is dense but spreads easily. Remove to a serving bowl, and chill until serving time. When ready to serve garnish with extra basil leaves, serve with Skinny Dippers, olives, cucumber and tomatoes for an authentic Mediterranean treat.
