Roasted Bosc Pear Relish


Bosc pears have mottled greenish brown skin, a lovely firm texture, and a sweet, slightly floral flavour with a buttery finish. We love this pear relish as a mate for cheeses, it balances out the tart tanginess of a chevre or sharpness of an old cheddar beautifully. It would be ideal with a blue cheese such as Stilton too. Be sure to enjoy the relish and cheeses with your favourite Pita Break Skinny Dippers! Roast the pears and veggies first then finish in your food processor. Makes approximately 3 cups of relish.

 

4 firm Bosc pears washed, cored, and cut into quarters
1 medium sweet onion peeled and coarsely chopped
1 cup of baby carrots
3 oz of extra virgin olive oil
1 oz honey
1 oz balsamic vinegar
1 tsp salt
¼ tsp ground pepper
¼ tsp ground celery seed
1 tsp dried thyme
1 tsp dried parsley

 

Preheat oven to 350° F. In a large mixing bowl combine all ingredients and toss until covered with the honey vinegar dressing. Place on a parchment covered baking tray or in a roasting pan. Roast for 30 minutes or until pears are easily pierced with the tip of a sharp knife. Remove from oven and cool slightly. Place roasted pear mixture into bowl of food processor and pulse until desired texture is obtained. Remove from machine bowl, place in serving bowl and chill until ready to serve.

Garnish with sprinkle of fresh chopped herbs if desired and serve with your favorite cheeses alongside Pita Break's Skinny Dippers.
